Soft and fluffy einkorn buttermilk pancakes with fresh berries and maple syrup in light coastal morning tones.

Coastal Einkorn Buttermilk Pancakes

Saturday mornings don’t ask for much.

Just a little more time.
A slower start.
Something warm on the stove while the house is still quiet.

These buttermilk pancakes are simple in the best way—
soft, familiar, and made with einkorn flour for a more natural, wholesome touch.

Nothing complicated.
Just something you can come back to, week after week.

🥞 The Recipe

Ingredients

  • 1 cup einkorn flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, whisk together einkorn flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla.
  3. Gently combine wet and dry ingredients (do not overmix—einkorn does best when handled lightly).
  4. Let the batter rest for 5–10 minutes (this helps the texture).
  5. Heat a buttered skillet over medium-low heat.
  6. Pour batter into small rounds.
  7. Cook until bubbles form and edges set, then flip.
  8. Cook until golden and cooked through.

🍯 Serve With

  • Warm maple syrup
  • Fresh strawberries or blueberries
  • A light spread of butter
  • Optional: a drizzle of honey for a softer sweetness
