There’s something about slow roasted potatoes in the summertime that feels comforting in the simplest way.

These roasted potatoes are crisp around the edges, tender in the middle, and filled with fresh rosemary, thyme, garlic, and a little lemon to brighten everything at the end.

Coastal Herb Roasted Potatoes
Ingredients
- 2 lbs baby gold potatoes, halved
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh thyme leaves
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp garlic powder
- Zest of 1 lemon
- Flaky sea salt for serving
- Fresh parsley for garnish
Instructions
1. Prepare the Potatoes
Preheat oven to 425°F.
Wash and halve the potatoes, then pat them dry well with a towel. This helps them roast instead of steam.
2. Season Everything
In a large bowl, toss the potatoes with olive oil, garlic, rosemary, thyme, sea salt, pepper, and garlic powder until evenly coated.
3. Roast
Spread the potatoes onto a parchment-lined sheet pan in a single layer, cut side down.
Roast for 35–45 minutes, flipping once halfway through, until golden brown and crispy around the edges.
4. Finish
Remove from the oven and immediately sprinkle with lemon zest, flaky sea salt, and fresh parsley.
Serve warm.
Notes
- Yukon Gold potatoes work beautifully here if baby potatoes aren’t available.
- For a healthier option, use avocado oil instead of olive oil.
- Fresh herbs give the best flavor, but dried herbs can work in a pinch.
- You can easily adjust the seasonings to your preference — onion powder, paprika, Italian seasoning, or extra garlic powder all work well here.
