Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 4
Ingredients
- 6 boneless, skinless chicken thighs
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 1 tablespoon butter
Peach Glaze
- 2 ripe peaches, sliced
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- ½ cup chicken broth
- 1 teaspoon fresh thyme leaves, plus extra for garnish
- 1 tablespoon butter
Instructions
- Pat the chicken thighs dry and season both sides with the salt, pepper, and garlic powder.
- Heat the olive oil and 1 tablespoon butter in a large cast-iron skillet over medium-high heat.
- Add the chicken thighs and cook for 5 to 6 minutes per side until deeply golden. They do not need to be fully cooked at this stage. Transfer to a plate.
- Reduce the heat to medium. Add the sliced peaches and cook for 2 to 3 minutes until they begin to soften.
- Stir in the garlic and cook for about 30 seconds, just until fragrant.
- Add the honey, Dijon mustard, apple cider vinegar, chicken broth, and fresh thyme. Stir gently to combine and allow the sauce to simmer for about 3 minutes.
- Return the chicken and any juices to the skillet. Spoon the glaze over each piece.
- Cover loosely and simmer for 10 to 12 minutes, or until the chicken reaches an internal temperature of 165°F.
- Stir in the remaining tablespoon of butter until melted and glossy.
- Garnish with additional fresh thyme and a few fresh peach slices before serving.
Serving Suggestions
Serve with:
- Roasted baby potatoes
- Buttered green beans
- Rice pilaf
- Grilled asparagus
- Crusty artisan bread
- A simple arugula salad with lemon vinaigrette
Tips
- Choose peaches that are ripe but still slightly firm so they hold their shape while cooking.
- Boneless chicken breasts can be substituted but may require a slightly shorter cooking time.
- Fresh thyme adds the best flavor, though ½ teaspoon dried thyme can be used if needed.
- Leftovers keep well in the refrigerator for up to 3 days and reheat gently in a covered skillet over low heat.
Recipe Notes
The glaze should be lightly sweet, balanced by the Dijon mustard and apple cider vinegar rather than tasting like a dessert sauce. As the peaches cook, they release their juices into the pan, creating a silky glaze that’s delicious spooned over potatoes or rice.
