Simple vanilla cake, fresh summer berries, and a light, creamy frosting come together in a dessert that feels both timeless and comforting. Ingredients
For the Vanilla Cake
- 2½ cups all-purpose flour
- 2½ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 large eggs, room temperature
- 1 tablespoon pure vanilla extract
- ¾ cup whole milk, room temperature
- ¼ cup sour cream, room temperature
For the Whipped Cream Cheese Frosting
- 8 ounces cream cheese, softened
- ½ cup unsalted butter, softened
- 3½ cups powdered sugar
- 2 teaspoons pure vanilla extract
- 2 tablespoons heavy cream
- Pinch of salt
For the Filling & Garnish
- 1 cup sliced fresh strawberries
- ¾ cup fresh blueberries
- ¾ cup fresh raspberries
- Additional berries for decorating
- Fresh mint leaves (optional)
Instructions
Step 1
Preheat the oven to 350°F. Grease two 8-inch round cake pans and line the bottoms with parchment paper.

In a medium bowl, whisk together the flour, baking powder, and salt.

Using a stand mixer or hand mixer, beat the butter and sugar together for 3–4 minutes until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract.

Alternate adding the dry ingredients with the milk and sour cream, beginning and ending with the flour mixture. Mix just until combined.
Step 6
Divide the batter evenly between the prepared cake pans.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
Step 7
Prepare the frosting by beating the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, then mix in the vanilla, heavy cream, and salt until light and fluffy.
Step 8
Place one cake layer on a serving plate.
Spread an even layer of frosting over the cake, then scatter the sliced strawberries, blueberries, and raspberries over the frosting.
Place the second cake layer on top.
Step 9
Frost the top and sides of the cake.
Decorate with additional fresh berries and a few fresh mint leaves if desired.
Chill for 20 minutes before slicing for the cleanest cuts.
