Garlic Butter Steak Bites with Roasted Potatoes

There’s something about steak and potatoes that feels a little special without requiring an entire evening in the kitchen. Since this week’s recipe falls on our anniversary, it seemed like the perfect time to share a dinner that feels worthy of the occasion while still being simple enough to make at home. Tender steak bites, golden roasted potatoes, fresh garlic, and just enough butter come together for an easy dinner that feels comforting and a little celebratory.

Ingredients

For the Roasted Potatoes

  • 1½ lbs baby Yukon gold potatoes, halved or quartered
  • 1½ tablespoons extra-virgin olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

For the Steak Bites

  • 1½ lbs sirloin steak, cut into 1-inch pieces
  • 1 tablespoon avocado oil
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons butter
  • 4 cloves fresh garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • ½ teaspoon fresh or dried thyme, optional

Optional Side: Lemon Garlic Roasted Broccoli

  • 4 cups broccoli florets
  • 1 tablespoon avocado oil
  • 2 cloves garlic, finely minced
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Fresh lemon zest, optional

To prepare: Toss the broccoli with avocado oil, garlic, salt, and pepper. Roast at 425°F for 18–22 minutes, until tender with lightly browned edges. Toss with fresh lemon juice immediately after removing it from the oven.

Easy Timing Tip: Since the potatoes are already roasting at 425°F, simply add the broccoli to the oven on a separate sheet pan during the last 20 minutes of cooking.

Instructions

1. Roast the potatoes.
Preheat the oven to 425°F. Place the potatoes on a large baking sheet and toss with olive or avocado oil, garlic powder, rosemary, salt, and pepper. Arrange them cut-side down and roast for 25–30 minutes, turning once if needed, until golden and tender.

2. Prepare the steak.
While the potatoes roast, pat the steak pieces dry with a paper towel. Season with salt, pepper, and garlic powder.

3. Sear the steak bites.
Heat avocado oil in a large skillet over medium-high heat. Once hot, add the steak in a single layer, working in batches if necessary. Sear for approximately 2 minutes per side, or until browned and cooked to your preferred doneness. Transfer the steak to a plate.

4. Make the garlic butter.
Reduce the heat to medium-low. Add the butter and minced garlic to the same skillet. Cook for about 30–60 seconds, just until the garlic becomes fragrant. Don’t allow it to brown.

5. Finish the steak.
Return the steak bites and any juices to the skillet. Toss gently in the garlic butter and sprinkle with parsley and thyme. Remove from the heat.

6. Serve.
Serve the garlic butter steak bites alongside the roasted potatoes. Add roasted broccoli, green beans, or a simple green salad for an easy, balanced meal.

Tips

For the best sear: Patting the steak dry before cooking makes a big difference. Moisture on the surface can cause the steak to steam instead of developing that beautiful browned exterior.

Don’t crowd the skillet: If your pan isn’t large enough to hold the steak in a single layer, cook it in two batches.

Healthy Substitutions: Grass-fed butter is a great option if it fits your preferences and budget. You can also replace half of the butter with extra-virgin olive oil. Choose minimally processed ingredients when possible, but organic ingredients aren’t necessary to make this a wholesome meal.

Lower-carb option: Replace some or all of the potatoes with roasted cauliflower, broccoli, or zucchini.

Make It Your Own: We love serving these steak bites and potatoes with Lemon Garlic Roasted Broccoli, but feel free to swap in your family’s favorite vegetable. Roasted green beans, asparagus, Brussels sprouts, or a simple green salad would all pair beautifully.
