Honey Peach Baked Oatmeal
Ingredients
- 2 cups old-fashioned oats
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 2 eggs
- 1 3/4 cups milk
- 1/4 cup honey
- 2 tbsp melted butter
- 1 tsp vanilla extract
- 2 peaches, peeled and diced
- 1/4 cup chopped pecans (optional)
- Light brown sugar for topping
Instructions
- Preheat oven to 350°F and lightly grease an 8×8 baking dish.
- In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together eggs, milk, honey, melted butter, and vanilla.
- Pour wet ingredients into dry ingredients and stir until combined.
- Fold in diced peaches and pecans.
- Pour mixture into prepared baking dish.
- Sprinkle the top lightly with brown sugar.
- Bake for 35–40 minutes until golden on top and set in the center.
- Let cool slightly before serving.
Serve warm with extra honey or a spoonful of Greek yogurt.
Notes
- You can substitute maple syrup for honey.
- Frozen peaches work well if thawed and drained first.
- For a healthier option, use monk fruit sweetener in place of brown sugar.
- Einkorn flour is not needed in this recipe, but you can stir in a tablespoon or two for a softer texture if desired.
- Chopped walnuts can be substituted for pecans.
