Honey Peach Baked Oatmeal

A warm and cozy baked oatmeal filled with peaches, cinnamon, oats, and a touch of honey. Soft in the center with lightly golden edges, this is the kind of breakfast that feels slow and comforting — especially with coffee on a quiet spring or summer morning.

Honey Peach Baked Oatmeal

Ingredients

  • 2 cups old-fashioned oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 eggs
  • 1 3/4 cups milk
  • 1/4 cup honey
  • 2 tbsp melted butter
  • 1 tsp vanilla extract
  • 2 peaches, peeled and diced
  • 1/4 cup chopped pecans (optional)
  • Light brown sugar for topping

Instructions

  1. Preheat oven to 350°F and lightly grease an 8×8 baking dish.
  2. In a large bowl, combine oats, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together eggs, milk, honey, melted butter, and vanilla.
  4. Pour wet ingredients into dry ingredients and stir until combined.
  5. Fold in diced peaches and pecans.
  6. Pour mixture into prepared baking dish.
  7. Sprinkle the top lightly with brown sugar.
  8. Bake for 35–40 minutes until golden on top and set in the center.
  9. Let cool slightly before serving.

Serve warm with extra honey or a spoonful of Greek yogurt.

Notes

  • You can substitute maple syrup for honey.
  • Frozen peaches work well if thawed and drained first.
  • For a healthier option, use monk fruit sweetener in place of brown sugar.
  • Einkorn flour is not needed in this recipe, but you can stir in a tablespoon or two for a softer texture if desired.
  • Chopped walnuts can be substituted for pecans.
