Ingredients
Lemon Herb Chicken
- 1½ pounds boneless skinless chicken breasts
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 teaspoons lemon zest
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon paprika
- 1 teaspoon sea salt
- ½ teaspoon black pepper
Bowls
- 2 cups cooked jasmine or basmati rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ small red onion, thinly sliced
- ½ cup crumbled feta cheese
- Kalamata olives (optional)
- Fresh parsley
- Fresh dill
- Lemon wedges
Creamy Tzatziki
- 1 cup plain nonfat Greek yogurt
- ½ cucumber, finely grated and squeezed dry
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon fresh dill
- Salt and pepper to taste
Instructions
1. Marinate the Chicken
Whisk together the olive oil, lemon juice, zest, garlic, oregano, basil, paprika, salt, and pepper.
Coat the chicken and let it marinate for at least 20 minutes.
2. Make the Tzatziki
Combine all tzatziki ingredients in a bowl.
Refrigerate while preparing the remaining ingredients.
3. Cook the Chicken
Heat a skillet over medium-high heat.
Cook chicken 6–7 minutes per side until golden and the internal temperature reaches 165°F.
Allow it to rest for 5 minutes before slicing.
4. Assemble
Divide rice between four bowls.
Top with:

- feta
- olives
Finish with tzatziki, parsley, dill, and a squeeze of fresh lemon.
Notes
- Swap the rice for quinoa for additional protein.
